Introducing food: salad

Last year I focused mostly on beauty and lifestyle, two things that bring me tons of joy. However, there is a third category that makes me smile and warms my heart, food.  I have decided that 2019 will be the year that I share my love for food. I hope you enjoy my creations, adventures and fun times with food.

Food has always been a big thing in my family, celebrations would always be around a meal and cooking would always be a whole day thing. I would go to my grandparents farm for a week at a time and during that time we would cook day and night. I remember my last week with poppa before he dies. We made a roast chicken one night with veggies, we made yoghurt and feta, we baked and baked, we made a curry or two and of course we would make my poppas amazing homemade bread.  Looking back I think that was  my poppas way of passing down what he knew.

Some of my favourite memories with my dad involve us cooking, making sushi, homemade pasta and the list goes on. All special events involved food, a new recipe or a new restaurant. Food was a celebration.

My relationship with food has not always been good, my depression made me an emotional eater. The amount of food I consumed to make myself feel better sickens me.  Food has bought me so much pain, it has knocked my confidence to the floor and made me hate my body so much I never want to leave the house.

2019 will be the year that I develop and stick to a healthy relationship with food. It will be the year I cook new things and try new things. Cooking makes me so happy that I want to bring that back into my life. Creating new recipes makes me feel on top of the world and this is the year I share that.

My first recipe of the year

I love a warm salad that does not have lettuce, lettuce is a waste of time in my mind. Today for lunch ive made a yummy roast veggie salad with a basil dressing. Its simple but tastes so good.

Heat the over to 230 degrees celsius.  Ive made this salad for one person but you can just up the amounts to make it bigger.

ingredients for the salad

  • 1 small pepper
  • 4 baby marrows
  • 1 handful baby tomatoes
  • 1 handful cauliflower
  • For protein, you can choose what you want. I added some mature cheddar ( i love cheese)

Cut up the veggies into small pieces and lay on a baking tray. Cook them for 30 minutes, this time does depend on your oven and how you like them cooked. I enjoy mine with a little bit of a crunch.

salad dressing

  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp crushed garlic
  • 1 tsp dijon mustard
  • 1 handful free basil

Blend the above all together to make a really yummy salad dressing.
